I get so much satisfaction when I send my kids off to school having had a filling and nutritious breakfast. It’s not an easy task though given the chaos and rush of our mornings (I hope I’m not the only one who by 8:30 am is in a deep sweat from chasing my kids to get dressed and has a sore throat from screaming). So coming up with some easy, healthy breakfast ideas for kids was a top priority for me. I wanted to share some of our family favorites so you too can have healthy breakfasts for kids ready to go every day of the week!
Healthy Breakfast Chia Pudding
What I love about this breakfast is you make it at night! I’m always on the hunt for healthy breakfast ideas for kids that I can prep in advance. After the kiddos have gone to sleep and I’ve cleaned up from dinner, I take 2 minutes (yup! 2 minutes) and store this goodie in the fridge for breakfast. I love so many of Tay’s recipes and this is just one example that I use as a base for a creamy, vitamin packed chia pudding. Your kids can top it with whatever they love - crunchy nuts, sweet fruit, a sprinkle of cinnamon, or all of the above!
Healthy Kids’ Greek Yogurt Parfait
Another great healthy breakfast idea for kids that is also fun for them to help assemble is a Greek yogurt parfait. We love to layer lowfat Fage Greek yogurt, Kellogs Bran buds or low sugar granola, and berries (whichever ones you love!). Eleanor loves to make it look very sophisticated in a clear cup so she can see the layers while she enjoys it. This breakfast has about 15 grams of protein and 11 grams of fiber which is an awesome way to start the day!
Mini Breakfast Egg Souffles
Eggs are always an amazing way to start the day because they are high in protein and packed with vitamins and minerals. But, they can be messy and take time to prepare on a rushed morning. Which is why I love keeping these mini egg souffles in my freezer! I was inspired by my friend Emily but feel free to throw in any veggies or cheese that your family loves. Our favorite combinations are mozzarella and spinach, broccoli and cheddar, or caramelized onions and feta cheese. You can even do a variety in one muffin tin so everyone has their souffle of choice! This healthy breakfast for kids can be yummy for the whole family to enjoy! And on those days when you run out of souffles, you can always order the Egg-Celent Choice from Yumble ;)
Another super fun and healthy breakfast idea for kids is smoothies. I love smoothies because they are a great opportunity for you to sneak in some boosters while still allowing your kids to choose what they want to make. I have a few smoothie staples that I always keep on hand - frozen fruits like bananas (peel them before you freeze them!), strawberries, pineapple, berries, mango, or you can buy this amazing mix of frozen fruits and veggies. Then I add any combination of almond milk, plant based protein powder, all natural peanut butter, chia seeds, spirulina, spinach leaves (call it a Green Monster and your kids will love it!), pitaya (dragon fruit), maca powder, cacao powder, you name it! And not only are smoothies a healthy breakfast but they are also a great on the go breakfast.
